Some yummy ideas to think about

Its that time of year again – No Wimbledon but strawberries in abundance

You may have heard on the news that some of the 38 tonnes of strawberries destined for the tournament is going to be turned into making Wimbledon jam and it got me thinking that there are so many delicious ways to eat them rather than drowning these beautiful fruits in cream.

Try grating some carrots and adding a little olive oil, lemon zest and juice, salt and pepper then add a handful of chopped strawberries and top with some delicious toasted pine nuts – some chopped parsley or any other herb will also add colour and flavour!

A lovely canapé with a difference ….. whip some soft goats cheese, cream cheese & ricotta and spread generously on a freshly baked crostini. Top with Parma Ham and thick slices of strawberry which have been marinating in sugar & balsamic vinegar.

For a light dessert with a slight tang …. Mix lemongrass, ginger, lime juice & sugar and add to chopped strawberries & mango – delicious – this recipe was featured in this month’s Waitrose magazine and is definitely worth a try.

For an indulgent breakfast, which Chloe has almost daily, we sit at the bottom of the garden surrounded by wild flowers and eat them with mango and pain au chocolat!
